lefse-making 101

Lefse is a Norweigian delicacy that was always served at Thanksgiving and Christmas when I was growing up and was a part of my family's traditions.

It's made from riced potatoes & flour, rolled very thin, much like a flour tortilla, then fried on a lefse griddle (without oil).

It's best served warm with a little butter spread on it, sprinkled with sugar, and rolled.
